On the menu for Day 3 of the Eat Down the Fridge Challenge were Meat Loaf & Mashed Potatoes Quesadillas a la Sam the Cooking Guy.
Mixed baby greens with avocado, carrots and tender cabbage made a crunchy counterpoint.
